Langres is particularly well-known for the excellent quality of its local produce.
What comes to mind first is Langres cheese – made from full-fat cow’s milk, the local origin of which is guaranteed. The skin of the cheese is an orangey-yellow, and the cheese itself is light yellow with a mild flavour that becomes stronger as the cheese ripens.
There is a slight hollow on the top of the cheese known as a “fountain” which is reminiscent of the ramparts around Langres.
