Langres cheese, which has its own registered designation of origin (“A.O.C.”), is made using old, traditional recipes. Its orange-yellow rind conceals a pale yellow cheese with a moderate flavour that becomes more pronounced with age. There is a dip in the top of the cheese known as the “well”.
